I always throw in a generous slosh of white wine once the onions have cooked.  Sometimes pink wine, if I've run out of white. It seems to work just as well and doesn't dye the thing pink!
My favourites would be mushroom risotto, with a few dried mushroom bits in, or asparagus and pea.
Yummo.

I'm going to continue to read your food blog, as cooking is my favourite thing to do too. It's an idea I hadn't thought about, but a food blog is something I could well enjoy doing, too... hmm...
